Tahini Coconut Yogurt
Since my recent trip to New York, I've been so happy to be back experimenting in my kitchen again! After trying the home-made tahini yogurt at De Maria, I immediately started thinking about how I could re-create it at home. At De Maria, the chef just served the yogurt with apricots & sumac but I kept thinking that it was missing a little more substance (it was a good thing I had that yummy banana bread on the side). So, to make this a more filling yogurt bowl I've added chia seeds for fiber, hemp seeds for protein and since us, Canadians can't get apricots until summer, topped it off with wild blueberries!
- 3/4 cup plain coconut yogurt
- 1 tsp tahini
- 1/2 tsp raw honey + 1/2 tsp for topping
- 1 tbsp hemp seeds + 1 tbsp for topping
- Pinch of cinnamon
- 1 tsp chia seeds
- 1/4 cup wild blueberries
Combine coconut yogurt, tahini, honey, half the hemp seeds, and cinnamon until smooth. Top with chia seeds, remaining hemp seeds, wild blueberries and drizzle with a touch of honey!
