Oats with Caramelized Apricot, Yogurt and Almond Butter


  • 2 apricots (halved and pits removed)

  • 1 tbsp raw honey

  • 4 tbsp water


  • 2/3 cup oats

  • 1 1/2 cups water

  •  pinch of pink salt 


  • 2 tbsp almond butter

  • 2 tbsp vanilla greek yogurt

  • 1 tbsp flax seeds 



Heat a small pan until hot. Add water, honey, and apricots. Reduce to medium heat and simmer for 6-8 minutes (until apricots are caramelized and tender).

In a small pot combine the oats, water, and salt. Bring to a boil then reduce to medium heat for 4-5 minutes. Keep stirring to ensure your oats don't stick.

Divide the oats into two bowls. Top each bowl with 2 apricots, 1 tbsp almond butter, 1 tbsp yogurt and 1/2 tbsp flax seeds.
