Vegan Banana Chocolate Chip Cookies
the best vegan banana chocolate chip cookies:
4 small bananas, mashed
1 cup almond flour
3 1/2 cups rolled oats
1 cup coconut flakes
1 cup semisweet chocolate chips
1 tbsp baking powder
1 tsp pure vanilla extract
1 pinch of sea salt
2 tbsp olive oil, to coat mixture
Preheat oven to 325 F. In a large bowl mash bananas, then add the rest of the dry ingredients and the vanilla. Combine the cookie mixture using a wooden spoon or your hands! Coat the combined mixture in olive oil. Take a heaping tablespoon of the mixture, roll it into a ball and flatten it out on a lined baking sheet. Bake for 15-20 minutes.
Makes 12 cookies.
