Stone Fruit Base

  • 4 large pieces of ripe stone fruit (I used nectarines and plums - peaches would great too)

  • 2 tbsp brown sugar

  • 1 tsp cinnamon

Oatmeal Crumble topping

  • 1/2 cup all-purpose flour

  • 2 cups rolled oats

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 2 tbsp brown sugar

  • 1/2 cup room temp coconut oil (melted works fine too)

Directions

  1. Preheat the oven to 350°F. Grease a 8 x 4 inch ceramic baking dish. A bread pan will also do the trick.

  2. In a large bowl, add the stone fruit base ingredients (fruit, sugar and cinnamon) and combine until the fruit is completely coated. Add the fruit to your baking dish.

  3. In the same large bowl, add the oatmeal crumble ingredients (flour, oats, baking powder, cinnamon, brown sugar and coconut oil). Combine using a pastry cutter or a fork if your coconut oil is solid to incorporate the mixture into coarse crumbs.

  4. Sprinkle the oatmeal crumble topping onto the stone fruit.

  5. Bake for 45-50 minutes, until the top is golden brown and the stone fruit is bubbling.

  6. Let the crumble cool 10-15 minutes before serving.

  7. Top with a spoonful of vanilla Greek yogurt or ice cream! Enjoy :)
