Strawberry Maple Dream Bars

In the spirit of Canada day, I have created these super tasty Strawberry Maple Dream Bars! No refined sugar, no dairy, no gluten and ALL THE GOODNESS!  

For the bottom layer

  • 1 cup almonds
  • 6 Medjool dates (pits removed)
  • 2 tbsp coconut oil
  • 1/2 tsp cinnamon

Blend in a food processor until combined. Press into a 9x9 inch dish and place in the freezer. 

For the strawberry maple layer

  • 1 cup raw cashews 
  • 1/2 cup freeze dried strawberries
  • 1 can cocout milk
  • 2 tsp maple syrup 
  • 1/4 unsweetened coconut flakes 

Blend in a food processor until smooth and creamy. Remove dish from the freezer and add on top of the bottom layer. Smooth and top with coconut flakes. Freeze for at least one hour or until 15 minutes before you are going to serve.
