Spring Greens: Pear + Fennel Salad - Kris Gill

Crunching into this pear + fennel salad today! It truly tastes like spring; fresh, crunchy and bright with citrus!⁣

To whip this up, you’ll need: ⁣

A few handfuls of romaine (arugula or mix greens work too)⁣
A small piece of fennel, shaved paper thin
1/2 ripe pear, sliced 1/8 inch thick
1 tbsp crumbled feta
1 tsp sliced almonds ⁣
Sprig of fresh mint ⁣
1/4 lemon, juiced ⁣
Dressing: ⁣
1 tbsp olive oil⁣
1 tbsp apple cider vinegar ⁣
1/2 tsp Dijon mustard⁣
1/2 tsp runny honey ⁣
Salt and pepper to season⁣

Mix up your dressing (taste, adjust if necessary) and dress your greens with about half.⁣

Add the toppings, drizzle a little more dressing if desired, squeeze of lemon juice and crack on some pepper!
