Spring Greens: Pear + Fennel Salad
Crunching into this pear + fennel salad today! It truly tastes like spring; fresh, crunchy and bright with citrus!
To whip this up, you’ll need:
A few handfuls of romaine (arugula or mix greens work too)
A small piece of fennel, shaved paper thin
1/2 ripe pear, sliced 1/8 inch thick
1 tbsp crumbled feta
1 tsp sliced almonds
Sprig of fresh mint
1/4 lemon, juiced
1 tbsp olive oil
1 tbsp apple cider vinegar
1/2 tsp Dijon mustard
1/2 tsp runny honey
Salt and pepper to season
Mix up your dressing (taste, adjust if necessary) and dress your greens with about half.
Add the toppings, drizzle a little more dressing if desired, squeeze of lemon juice and crack on some pepper!
