Minted Green Bean Salad
In need of a fresh green side for you plate this spring? Look no further! This minted green bean salad is a recipe that Nick’s mom made us during her visit last week and it’s just too good not to share. Not to mention simple to make… and you know that’s what I’m all about! Simple, healthy recipes!
4 large handfuls of green beans
1 tbsp extra virgin olive oil
2 tbsp rice vinegar
1 tbsp chopped fresh mint
Pinch of sea salt
Black pepper to taste
Fill 1/2 a medium sized pot with water and bring it to a boil. While you’re waiting for the water to boil, chop the ends off the beans and cut them in half. When the water is boiled add the beans and cook for 2-3 minutes. You still want them to have a little crunch! Then, strain the water.
Next, in a bowl add the oil, rice vinegar, salt and pepper and stir together. Add the beans and chopped mint. Combine everything and place it in the fridge to cool.
Take the beans out of the fridge 5 minutes before you’re going to serve! Enjoy xx
