Pancakes are such a classic weekend breakfast staple. And because pancakes are more of an indulgent treat, I love to make this healthier version using just banana and oats as the base to enjoy them guilt free as much as possible! Pro tip: make sure your bananas are full of brown spots to get your pancakes extra sweet.


1/3 cup rolled oats

1 ripe banana

2 tbsp. plain Greek yogurt

¼ tsp. baking powder

¼ tsp. cinnamon

2 tbsp. water

1 tbsp. coconut oil


Place all the ingredients besides the coconut oil in a blender and combine until you get a smooth batter consistency (you may need to add an extra tbsp. of water depending on the size of your banana). Heat up your pan and then reduce to medium heat and add your coconut oil. Then pour in your mixture and wait until you see lots of little bubbles forming on the surface of the pancake. Then flip and cook for another 1-2 minutes.

Top your banana pancakes with whatever you’d like! I went with plain Greek yogurt, fresh raspberries and a drizzle of local honey. Enjoy!
