Chia, Blackberry + Coconut Pudding
simple + healthy chia pudding
The perfect light summer breakfast or snack, if you ask me!
To make this:
Blend 1 cup of fresh or frozen blackberries with 1 cup of coconut milk and 2 tbsp pure maple syrup in a high speed blender.
Pour the mixture into a bowl, add 1/4 cup of chia seeds and stir well to combine. Divide pudding into two cups and place in the fridge overnight or for at least 3 hours to allow the chia seeds to soak up the nutritious liquid!
Enjoy these beauties topped with yogurt, coconut flakes, slivered nuts, seeds or more fresh berries!
