Chef Brittany’s Day On A Plate
Who doesn’t love a good what I eat in a day interview? Especially when the interviewee is a health conscious chef who’s always cooking up something delicious in her kitchen!
Here’s what this east coast chef has on her plate:
I start every day with a smoothie! During the week I don’t make a green smoothie because I’m making it for my partner in the morning as well (he’s not a fan and it’s all about balance in the household). I can however sneak spinach and chia seeds into a blueberry smoothie because he can’t see or taste the difference! My favourite smoothie combination right now is pineapple, mango and peach with real Balkan yogurt and protein powder to keep me going on a really early morning.
Around 10 am I will have oatmeal. I make a batch on the stovetop and store it in the fridge. I take this with me to work in a container 3-4 days per week. I like to add some frozen berries on top in the morning and by the time I go to eat it they are melted!
Lunch is always what I had for supper the night before! Or some variation of it…easy!
Boiled eggs are my go-to for a quick, healthy protein snack! I boil them at the beginning of the week and store them in the fridge for easy snacking.
I’m a huge fan of nextovers. I usually batch cook a dinner 2-3 times per week and just add a new element to refresh the dish in between days off to keep it going. Honestly, sometimes I may not be in the mood to eat something more than twice. In that case, the freezer is your friend!
