Breakfast Salad Bowl

I’m always looking for ways to add greens to my brekkie to start off the day! It’s usually in some form of a smoothie... but why not with a savoury fry up? Hence, the Breakfast Salad Bowl!
I started with my usual savoury base of sweet potato hash, charred cherry tomatoes, a fried egg and then placed it all on top of a bed of greens. Simple! The key to making this all come together is in the dressing!
Mix: 1 tbsp olive oil, 1/2 ripe avocado, 1/2 lemon juiced, 1/4 tsp adobo, 1/4 tsp runny honey and a pinch of sea salt. Add a splash of water to blend if you need to!
