Ingredients

  • 1/4 cup melted coconut oil + a little extra for greasing

  • 2 cups rolled oats

  • 4 ripe bananas

  • 1/2 cup brown sugar

  • 1/2 cup unsweetened almond milk

  • 2 tsp baking powder

  • Good pinch of sea salt

  • 1 cup walnuts

  • 1/4 cup 70% dairy-free dark chocolate

Directions

  • Preheat the oven to 350°F and get all your ingredients together.

  • Grease a non-stick loaf tin with coconut oil.

  • In a food processor, blitz oats into a course flour. Set the flour aside in another bowl.

  • Add the bananas, coconut oil, almond milk and brown sugar in the food processor and blitz until fully combined.

  • Add in the oat flour, baking powder and a good pinch of salt. Combine.

  • Add in the walnuts, blitz a few times to break up the nuts into the mixture.

  • Pour half the batter into the tin, add the chocolate pieces along the batter, then pour the rest on top. Sprinkle the top with a few extra pieces of chocolate and brown sugar if you’d like!

  • Bake for 1 hour (make sure you check the skewer comes out clean, all ovens are different). Leave to cool on a rack for at least 30 minutes. This will be the hardest part, but very important to ensure it doesn’t crumble!
